What are the recommended brewing methods?

Fringe is our take on a dark roast, so we think it really shines as a brewed cup of coffee or espresso. The strong chocolate notes excel!

We love it on any brewing method you prefer for a cup of coffee.

How should I brew this coffee?

To get the best out of this coffee we always recommend this recipe as a stating point

  • Brew with a 1:16 ratio (one gram of coffee to every 16 grams of water).
  • Use water that is between 198 - 204 degrees Fahrenheit
  • Adjust your grind for a 3-4 minute brew time. (The finer the grind, the longer it will take to brew)

How do I brew this coffee as espresso?

Where is this coffee sourced from?

Mexico

Washed - Chiapas
Chiapas is the southernmost region of Mexico. The mountains of this region span into bordering Guatemala and much of this tropical forest is the protected Triunfo Biosphere Reserve. This area is humid and tropical, inhabited by small communities of producers who have formed cooperatives to gain stronger representation in the coffee market. These producers take pride in their land, growing coffee organically through methods passed down from generation to generation.

The farms contributing to Triunfo Verde Co-op are located in the buffer zone of El Triunfo Biosphere Reserve. The biosphere is located in the highlands of the Sierra Madre de Chiapas. El Triunfo Biosphere Reserve is one of the world’s most diverse forest reserves. This reserve contains Mesoamerica’s largest continuous cloud forest, and it serves as a refuge to thousands of plant and animal species. El Triunfo is a rare and valuable sanctuary that requires continued protection. All the coffee they produce is shade-grown, and biological corridors are created in order to facilitate bird and animal migration.

Triunfo Verde Co-op comprises 346 members and is managed by Hugo Lares, with quality control supervision by Calixto Guillén. Calixto is a highly motivated leader and is committed to quality: He has been very excited about the microlot project between TFV and Cafe Imports.


DR Congo

Washed - Kivu

This region of the Democratic Republic of Congo surrounds lake Kivu and neighbors Rwanda, Uganda, and Burundi. The region is divided into three subregions: Ituri, Nord-Kivu, and Sud-Kivu. Sitting directly on the equator, Kivu one of the most diverse in terms of elevation, flora, and climate. Most of the region's land would be considered a tropical savannah, but the high elevations of the Virunga mountains are temperate, rainy, and volcanic creating an ideal climate for coffee production.

These specific offerings come from a group of 51 pygmy women who live and farm in the villages of Mishebere and Ruhunde in the Kahele territory. Historically, Pygmy people have faced terrible discrimination and disenfranchisement, including being forced into slavery and/or low-paying work. SOPACDI has started this project to source and keep separate coffee from this group of growers in order to provide them a better income from specialty coffee as well as more financial independence and autonomy. The producers each own an average of 0.5 hectares and deliver coffee in cherry form to the washing station. There is a price premium paid directly to these women farmers to use as they see fit.

What size bag should I order?

Great question! Ultimately, it just comes down to your coffee drinking rate, but we loosely recommend the following:

12 oz = Each bag brews approximately 2-3 cups per day for a week.
2 lb = Each bag brews approximately 2-3 cups per day for about 2-3 weeks.
5 lb = Each bag brews approximately 4-5 cups per day for about 3-4 weeks.
